		<description>wood or stainless will be fine,you should never place your knives of any kind in the dishwasher anyways.
the caustic chemicals in your soap will eventually corrode and rust your knives.a simple hand washing is best.

		<description>Personally, I would select the stainless or composite.     I have Henkel and Sabatier with composite handles.   They are very sanitary and have a comfortable grip.     

And, please don&#8217;t put an expensive high carbon stainless blade in the dishwasher.</description>

		<description>First, Chicago knives are &#8220;OK&#8221;. good for first starting off with better knives or for a more affordable choice. but I would much rather invest in Wusthof or Henkel myself. To me a good set of knives is an investment but anywayssss. no matter what kind of knife you get, wood, steel, etc, NEVER EVER EVER put them in the dishwasher or they will never last. When you use the knives, you simply wipe them down with a damp towel or when cutting meat, you use a soft sponge with soap and ALWAYS dry them immediately and put them back in their rack. Do not ever put them in the dry rack. You must RESPECT the knife.

Feelin my passion. To answer your question, I&#8217;d go with Stainless Steel. it will last longer.

		<description>My father was a chef and he noted one problem that can occur with some wooden ones(dependent on quality ofcourse), if you leave them in water for long periods the wood can expand. 

I bought a set of metal handled Jean Patrique knives from an offer in a sunday supplement magazine last year and they are excellent quality and comfortable to hold, the offer sounds too good to be true and you think whats the catch but there was none. I paid a couple of quid for the set of 3 knives plus £5 or £6 delivery.

Might be worth you having a look at their website.</description>
