I’ve reorganized my kitchen cabinets and now have one set that’s completely empty with nothing to put in it. Are there any items that would make sense to keep in a kitchen that one might not necessarily think of.

Emergency supplies — things you use when the power goes out.
Flashlights, lanterns, portable stoves. Foul weather gear, plastic garbage bags. Large (5 gallon) containers of water (that you pour out and refill at least once a year.) Earthquake emergency kit.
You could make it a craft cupboard. Put all your paper, paints, pencils, tape, scissors, etc. in there, that way when you want to create they are all int he same place. And it makes it easy to clean up afterward if it all goes back in the same area. Less thought, less confusion- more clean.
If you have all this extra space, you might like to arrange the cupboards so that your most common (or most tricky) tasks in the kitchen are made as easy as possible.
Often, when stacking up platters and large serving bowls, they’re arranged to make best use of the cupboard space: this means that when it’s time to get a particular item out, there’s a massive re-arrangement of plates. With your extra space, you could arrange these things in a way that lets you remove a platter as you need it.
A similar approach could apply to plastic storage containers (for leftovers), or even to frequently used pantry items.
You could also use the extra space to store temporary seating (for when unexpected guests crowd around a table) - folding chairs and tables.
If there are other things that are usually done in the kitchen - kids’ craft or homework, for example, then you could store all the craft items, ready to go.
