I am having my kitchen redesigned. Is there any restriction/considerations I need to take on board when thinking about where the oven and extractor fan should go.

Depends on the type if its an extraction unit then you need to plan for the exhaust trunking, The hood will have designed specs how far the trunking can be etc, so check with the model manufacturer.
If its a recirculating one then it can go pretty much anywhere as long as it has power. You can get ones that hang from the middle of a ceiling if you are building an island for example.
Ideally the extractor needs to lead to a vent on the outside of the house. As far as the oven is concerned. If it’s gas it will need an easily accessible supply and need to be fitted by a registered fitter. If it’s electric it will need to go onto it’s own circuit (due to heavy load) so as long as that’s accessible then you should be OK wherever.
